“Rain, rain, go to Spain and never show your face again!”
Well, that is how I feel this morning as I have fairly well swum to school with my offspring (number one son went solo, with a flea in his ear and no coat on account of having lost his, again!). We did however book last night to go to Spain in February and visit some lovely friends, so maybe I should be grateful for the rain and stop wishing our inconvenient weather on others who live in usually sunnier climes.
Soup weather however it certainly is and I made a new variation at the week end to warm and cheer us all up. Half of us had been cooped up inside feeling a bit lack lustre and the other half had been moving a friend from one flat to another, so we all needed feeding!
I roasted all the red or orangy coloured vegetables I had in olive oil with plenty of salt and pepper – a few titchy carrots, lots of the famous pumpkin, a few stray onions and two sweet potatoes. When they were cooked I put them in a large pot and covered with water, added a stock cube and a tin of tomatoes, cooked for about 10 more minutes and then blended it until smooth.
If you decide to try this one remember to check the seasoning again as tinned tomatoes have a habit of making whatever you are cooking a bit sharp if you are not careful.
