Bloggers block has struck again, but the curse must be broken and what will do it this time is that I know my friend Gill will ask me today, for the umpteenth time, for my Famous Chocolate Fridge Cake recipe. I will tell her for the same umpteenth time that I WILL give it to her, that it isn’t a secret and that I only have the quantities for 40 adults or 60 children. Endlessly patient as she is I fear that it is wearing more than a bit thin, so here it is, precisely three and a half hours before she will gently and persistently ask me again!!! You heard it here first……..
The original recipe comes from my mother’s recipe book and is accompanied by this wonderful description. ‘This cake can be made in 5 minutes, needs no baking and can be made with broken biscuits’ - A winner by anyone’s standards!! It has of course been adapted over time but as it currently stands looks like this:
12oz digestive (or whatever you have) biscuits
4oz butter
4 tbsp golden syrup
2 tbsp cocoa powder
a handful of raisins, sultanas, cherries or whatever
Melt the butter, syrup and cocoa powder in a pan
Remove from the heat and stir in the broken biscuits and dried fruit
When the biscuits are completely covered press down into a greased or lined tin
Press down firmly using the back of a hot spoon
Put in the fridge to set
Cut into slices and watch the gannits descend!
Variety being the spice of life and all that -
For a posher version, you could add a layer of melted chocolate before you put it to set
For a citrus version, you could use half an orange or lemon to press it down
And for a nuttier experience exchange fruit for nuts
