Real Devon scones

These quantities make about 5lb (about 6 jars) of delicious jam.
1.6kg (3.5lbs) strawberries
3 tbs lemon juice
1.4kg (3lb) sugar
knob of butter
Put the strawberries in a large pan on a low heat for about 10 minutes to soften them. You can also mash them a little so that some are whole but most are pulped.
